100% Chardonnay. The grapes were hand-picked from mid February to end of March 2006 with an average yield of 4 tonnes per hectare. After whole-cluster pressing only the free-run juice was used. 80% was fermented in 225-litre and 500-litre French oak barrels. 20% was fermented in stainless steel tanks and blended back as a fresh component. A third was matured in new barrels and the remainder in second-fill barrels. Matured for 11 months in 500-litre French oak barrels. A wine that truly captures the essence of the variety. Elegant and well structured with layers of fresh fruit, green apple, pear and capers. Well-integrated oak flavours with a hint of vanilla pod and roasted cashew nut.
