After being cold settled, the must was left to ferment in thermo-regulated tanks for approximately 30 days with frequent stirring. The wine was racked late in July and bottled in August 2011. Visual: Pale yellow, clear. Nose: Powerful with aromas of very ripe fresh fruist and a touch of white peach. Palate: Rich and complex, with notes of a compote of ripe fruits. Well balanced with a good acidity. Serving temperature set at 9–11°C, it is best served with fish such as turbot, John Dory or red mullet, or crustaceans such as lobster and scampi.
