Terroir: A combination of two terroirs – Oxfordian caillottes and Kimmeridgian marls. Vineyard: Some of the vineyards have grass growing between the vines while in others the soil is ploughed in the winter and hoed. Pruning: Single Guyot and Cordon de Royat. Disbudding and desuckering. Vinification: The grapes are hand-picked and sorted in the vineyard before being brought to the winery in 40 kg crates. They are table sorted at the winery and completely destemmed. Daily punching of the cap and pumping over the must. Fermentation lasted 30 days. A belt is used for devatting. The grapes are gently pressed using a pneumatic press. Ageing with 60% in barrels and 40% in stainless steel tanks for 11 months. Then the wine is blended for another 11 months ageing 100% in tanks. Bottled in September 2012. Tasting notes: Ruby red. Aromas of red fruits – fresh strawberry, cherry and floral. Wet chalk, due to the soil. Elegant, complex and delicate. Balanced. Silky, well constituted and long in the mouth. Ageing potential: 3 to 6 years.
